Learn how to smoke fish, cheese and other foods
The food smoking course is a one day practical hands on introduction to Food Smoking. You will be covering the basic theory of cold and hot smoking, how to make and use a cold smoker, sourcing wood for smoking, brining & salting salmon, Health & Safety, producing smoke and the principles of combustion. During the day you will be cold smoking at least 6 different foods and hot smoking a trout.
Course delegates who would like to continue smoking their own food at home have the opportunity to purchase a selection of food smoking items from Cold Smoking on the day.
This is a practical relaxed hands on day. Somewhat different from the traditional cookery course where everyone has the opportunity to get as involved as much or as little as they wish. Turan will be leading the course and is always happy to answer any questions you may have on the subject of smoking food.
On the course you will be taught how to cold smoke food using only basic equipment and techniques which won't cost you the earth. This sits extremely well with the philosophy of sustainability. Turan is acutely aware that you may not feel that smoking food is something you wish to spend lots of money on. The course has a good mix of practical hands on and theory and during the course you will be shown how to build a working cold smoker for under £12.00.
As part of the course you will receive The 29 page booklet on smoking fish at home together with a complete set of cold smoker construction drawings absolutely free. Turan has a variety of smoking woods, dusts and smoke generators available to purchase on the day of the course.
Smoking food is sometimes a smelly business and it is recommended that those attending the course wear suitable clothing they don't mind exposing to smoke.
The course starts promptly at 10.00hrs and runs until approximately 16.30hrs. There will be a break for lunch and tea breaks in the morning and afternoon. Tea/Coffee and a buffet lunch are provided. Please indicate when booking if you have any particular dietary needs. We are experienced in catering for a variety of needs including ceoliacs and vegetarians.
